Since we had some turkey leg bones left over, we decided to make some hearty watercress soup! Soups are the best…just dump everything in the pot and wait for 2 hours!
- 1 piece dried orange peel
- 1 tsp dried goji berries
- 2 dried dates
- 1 tsp dried almonds
- 3 bunches watercress
- 1 slice ginger
- 2 large turkey leg bones (or more)
- 1 bunch of mushrooms (optional)
Wash everything, bring to a boil in large pot, then simmer for 2 hours. The more bones you have, the tastier the soup. When we don’t have turkey bones, we like to use pork bones.
