Turkey Watercress Soup

Since we had some turkey leg bones left over, we decided to make some hearty watercress soup! Soups are the best…just dump everything in the pot and wait for 2 hours!


  • 1 piece dried orange peel
  • 1 tsp dried goji berries
  • 2 dried dates
  • 1 tsp dried almonds
  • 3 bunches watercress
  • 1 slice ginger
  • 2 large turkey leg bones (or more)
  • 1 bunch of mushrooms (optional)


Wash everything, bring to a boil in large pot, then simmer for 2 hours. The more bones you have, the tastier the soup. When we don’t have turkey bones, we like to use pork bones.
